This would be me…way too excited for liquid nitrogen ice cream. I volunteered as a tour guide for Salk Institute’s High School Science Day and for most of the time, I was 10 levels more excited than most of the high school seniors and juniors (hence the guy yawning while I’m looking slightly crazed).

One of my healthy eating goals is to limit my sugar intake. My marathon running pal is doing a no-sugar diet (she’s been going strong for a month), but I know that I am not going to go through life without eating desserts, especially when I’m traveling to exotic places (and I totally will!…Europe before 26 is another goal!) I enjoy ice cream, and I find the simplest and most satisfying substitute are frozen fruits. I’ve been having a light dessert of berries and applesauce after dinner and aiming for one delectable treat a week such as a mini frozen yogurt from Golden Spoon on Fridays =). ! Does this sound like a good plan?  

$4.50 scoop of Red Bean Ice Cream (but it was free!) 

My roommate and I went out for dinner and we shared our dessert =) Be generous and offer the last bite to your friend! (She offered it to me…). My roommate decided on red bean ice cream because it was something we normally wouldn’t have. I thought this was a satisfying and pleasing way to have dessert. Choose something unique and new so you can have a new experience! 

Bought a food processor just so I can make 1 Ingredient, Banana Ice Cream!!

I’m still working on getting the right consistency. Here, I think I blended it too much so the frozen bananas started melting. I drizzled my dessert with maple syrup and added some nuts and dried fruit. 

WHY I love this: Makes me never want regular ice cream with skim milk, sugar, cream, miniature marshmallows (corn syrup, modified corn starch, sugar, gelatin, tetrasodium pyrophosphate), cocoa processed with alkali, roasted almonds (almonds, partially hydrogenated soybean oil), whey protein, egg yolks, Propylene Glycol Monostearate, guar gum, monoglycerides, xanthan gum, carrageenan, vitamin A palmitate….
