Baked Banana
The days are getting colder so I desire something warmer than the frozen berries I ate all summer for dessert. Many of the “Baked Banana” recipes called for honey and brown sugar, but I decided to try it first without any added sweeteners to see how I like it. Turns out baking bananas makes them even sweeter! Anything more would have been a sugar overdose.
Tastes like Thai-style fried banana, but healthier!

You can add cinnamon, crushed nuts, powder peanut butter, more fruit, unsweetened cocoa powder, a tablespoon or chocolate chips, or even some vanilla protein powder.
Today school ended at 12.15 which meant no lunch, plus our last subject of the day was gym. Naturally I needed a filling breakfast. I recently asked Geri (http://surfnrunnr.tumblr.com/) for suggestions when it comes to toppings for oatmeal porridge. One of the things she recommended was when it is still thickening throw in some bits of banana. The banana melts and makes the oatmeal extra creamy. Bananas are high in carbs so I thought they would fit perfectly for today. I tried the recipe and it was VERY good! This is perfect for those days you need a bit of extra energy in the morning :D Wonder what I’ll do tomorrow.

I was going to eat another Bubbies Mochi but then realized this! So ridiculous!! Make your desserts worth it. Bubbies was featured as one of the 10 Best Ice Cream places in America and mochi is their specialty. I believe that food is part of culture, so don’t be afraid to try something people are talking about.
What I do: eat the most popular flavor, take a picture (because it definitely lasts longer), and then share it with someone!

I usually add posts to my queue but I was SOOO excited about this recipe, I had to share it right away!
Chocolate Banana “Ice Cream”
1. 2 small frozen bananas
2. 2-3 tablespoons of unsweetened cocoa powder (I used Ghirardelli’s all natural which is only 15 calories a tablespoon)
3. 2 tablespoons of milk
Whiz until desired consistency in a food processor!
This is SOOO good. My roommate and I were licking our spoons and the bowl of the food processor. Best part about this dessert, is that it needs no added sugar! The bananas are plenty sweet and mixes with the cocoa to give a delicious chocolatey flavor. Perfect ending to the day!
In the morning, I cut up 2 small bananas, place them in ziplock bags, and throw them in the freezer. At night, I have a great dessert waiting for me! =)
PS: I take pictures with my iPhone, and am not a great food blogger/photograph so this chocolate ice cream mayyyy resemble something else less appetizing…BUT trust me, it’s SO GOOD. I’m in love. <3 <3 <3
Banana-one-ingredient Ice Cream!
1) Cut up 2 ripe bananas and freeze.
2) Add to food processor and blend until creamy and only few chunks are left. (I’m still working to get the right consistency. If you blend too much like the image here, then the banana melts)
3) add 1/2 teaspoon of vanilla extract if you want the flavor.
4) Top with fruit, almonds, and drizzle with honey or maple syrup!

Bought a food processor just so I can make 1 Ingredient, Banana Ice Cream!!
I’m still working on getting the right consistency. Here, I think I blended it too much so the frozen bananas started melting. I drizzled my dessert with maple syrup and added some nuts and dried fruit.
WHY I love this: Makes me never want regular ice cream with skim milk, sugar, cream, miniature marshmallows (corn syrup, modified corn starch, sugar, gelatin, tetrasodium pyrophosphate), cocoa processed with alkali, roasted almonds (almonds, partially hydrogenated soybean oil), whey protein, egg yolks, Propylene Glycol Monostearate, guar gum, monoglycerides, xanthan gum, carrageenan, vitamin A palmitate….

Baby Bananas: I’ve been eating one or two after dinner as a small, yet sweet dessert! Whole bananas can be too large and pack a lot of sugar. They are also good for slicing into yogurt parfaits. I always try and cut half a large banana and save the other half…but always end up eating the whole thing. I don’t know about you, but I hate leaving anything half opened/used. Therefore, these bite-sized bananas are saving me some calories =)
